Everyone loves cupcakes once in a while; so I thought I would share my recipe. I like to use butter cream icing because I think it taste better. Many people don't use butter cream because it usually melts in hot weather, but if you add a bit more icing sugar you can make the consistency harder. This means that the butter cream will keep its place throughout all weathers.

These Cupcakes are the ones we made for a retirement party for an old policemen.
